Today's Recipe - Grandma's Spicy Meatloaf from Celia Lovett.

INGREDIENTS:
1 pound ground chuck
1 pound hot breakfast sausage
1 large green pepper
1 large onion
1 sleeve regular (salted) saltines or like cracker
2 eggs
1 can tomato soup

Preheat oven to 350 degrees

By hand or food processor, chop the onion and green pepper in small pieces (be sure to remove seeds from green pepper before chopping).

Crush most of the sleeve of saltines into small pieces. (I usually do this by hand, leaving 5 to 8 saltines unused.)

In a large mixing bowl combine all of the above ingredients but keep one egg aside. Mix all ingredients thoroughly by hand. (Very messy!)

Well grease the top of a broiler pan. You can also use tin foil but be sure to cut slits in foil to allow for grease to drain to the underlying pan. Place about a ¼ cup of water in lower pan.

Crack and whip egg in small bowl using a fork. This is your egg wash.

Divide into 8 same sized oval loaves, roughly the size of a tribble (Star Trek reference) and roll into a smooth somewhat oval shape. Take the beaten egg wash and use hands to cover each individual loaf on all sides with egg before placing on top of broiler pan. The 8 loaves should cover most of the top broiler pan.

Cook at 350 degrees for 50 to 60 minutes.

The broiler pan method is IMPORTANT because it allows the excess grease to drain into the water and leaves each loaf to form a crust of sorts but keeps the inside moist.

While this makes a large amount, any uneaten loaf can be refrigerated and reheated. It makes good cold sandwiches or eaten with crackers, or can be reheated in microwave or oven.

This also freezes well. Just wrap the uncooked loaf (withhold the egg wash) in plastic and it will keep for months. Just thaw, egg wash and cook as directed above.

This is very spicy. You can use medium or milder sausage for less heat for folks that can't take spicy. You can also make it hotter by adding jalapeno peppers (or whatever pepper of your choosing) or jalapeno juice from the jar. Should your mixture feel dry, add some more tomato soup or a little water. If too wet, add more cracker crumbs. It needs to be the right consistency to hold the small loaf shape.

My friend Beth invited me to go to Knott's Berry Farm with her niece and nephew today and I was dared to go on all the scary rides.

My father continues to improve and he's nearly back to his ornery ol' self. His physical therapist keeps encouraging him to walk and he keeps exceeding our expectations. Today his PT told us that it is now safe for me to take him out on walks, which my father is very excited about. I've wanted to do this on a couple of occasions, but have been concerned about doing this, but now that I have the approval of the PT, as long as I abide to some conditions, we can do this.

We are starting to wind down on this California trip. My father got out and walked with only me as his support as per his Physical Therapist and beat his previous days walking record His TIPS procedure was pushed back one day and will now happen on Tuesday. He continues to show improvement day to day and thanks you for your continued thoughts and prayers.

I'm finally back home, my father had his TIPS procedure today and everything seems to have gone well. Nibble is getting a little more comfortable with the shelves and Byte likes to talk to himself

I've wanted to visit this place ever since I arrived in Waco, but it's been too hot. This week the temperature has been lower, so today I got a chance to see it.

Today I visited Oakwood Cemetery, the oldest public cemetery in Waco. There are some famous and historical people buried here.

As I get older, I have a chronic issue with excessive ear-wax formation in my ear. After a while it plugs up my ear canal and I need help to clear things up. Today, we deal with that. Sorry!

I'm putting a bunch of nonsense in this field because apparently YouTube's AI get threatened if the description field is left empty and that may be the reason they keep demonetizing my videos. It's kind of hard to say what this live stream is really going to be about because this is an open forum where you decide what this live stream is really going to be about and I can't possibly predict what you might actually want to talk about, but whatever. It's day 4 of my California trip and My father continues to improve. He got out of bed and walked about 150 feet today and was eager for more. He is also anticipating his TIPS procedure, which might happen in as few as 5 days. He thanks you for your continued thoughts are prayers. They're working!

Today I went to see the Heart O' Texas Fair & Rodeo. I've never been to a Rodeo before and I just kind of stumbled upon this one.

My father has greatly improved and it is now time to head back home to Texas. I miss the kitties and I'm ready to get home again.

Today I decided to start driving and see what I found. I ended up in Crawford, Texas and just wandered around town. I ended up finding someone who knew where the Bush Ranch was and went and found it.
